So in 1965 I was about… oh, well, you figure it out… I was old enough to go around singing a song called, “Sunshine, Lollipops and Rainbows,” all the time! So, when I started grilling these amazing little lamb chops, the song got stuck in my head again. Leslie Gore and Frankie Avalon… remember them? The brown sugar in Endora’s marinade (recipe on this site) makes these chops a little sweet (not as sweet as Leslie but almost!) The tarragon tang of the Bearnaise sauce is PERFECT with the chops. Add a nice glass of Bordeaux and you’ll be transported.
Ingredients
Lollipop Lamb Chops
Directions
Marinate the chops in Endora's marinade for at least 3 hours. Fire up the grill to about 550 degrees.
Step 1
Remove the chops from the marinade and let them come to slightly cooler than room temp on the counter.
Step 2
Grill on a hot grill for about 2 minutes per side for medium rare.
Step 3
Remove from the grill and cover with foil for about 5 minutes. Then serve with the Bearnaise sauce.
